Its Mothers Day today and just the perfect day to start my blog . I have been lucky to be blessed by three mothers ,my Mother , My Mother in Law and my Sister . They all deserve a Thank you today. I got my skills from my mother and all this is thanks to her .
Baking is my first and foremost passion . I love to try different things but nothing beats a simple No icing naked Cake . Its loved by everyone . Be it with a cup of coffee or a midnight snack , a marble cake is always welcome at my place.
This cake uses dark chocolate instead of Cocoa powder which makes all the difference .
When i started preps to make this cake i realised i had ran out of dark chocolate as well as milk chocolate . And i was in no mood to cancel the baking today . Luckily i had a cadbury Bournville cranberry with me . I really wasn’t sure if it will work but just went ahead with it . The cake turned out just perfect . So you can use any flavoured dark chocolate in this recipe .
This cake Can be made in a Loaf Pan or a 6 inch Cake tins.
All the ingredients should be at Room temperature.
YOU NEED :
Butter – 85 gms
Castor Sugar – 1/2 cup
Eggs – 2
Vanilla extract – 1/2 tsp , Better if Pure
All purpose flour – 1 cup plus 1 tbsp loosely packed
Baking powder – 1/2 tsp and a pinch
Milk – 1/4 cup
Dark chocolate – 60 gms, chopped
HOW TO :
Preheat oven to a 180 degree celcius. Line a loaf pan with baking paper .
Sift together Flour & baking powder and set aside.
Melt the chocolate in microwave or in a double boiler .Let it cool a bit .
Now In a bowl , Whisk the butter with an electric beater till its light and fluffy. Add in the castor sugar and beat till its light and fluffy .
Add the eggs one at a time and beat. Now add in the Vanilla extract . The villa extract makes a lot of difference in this cake . Its better if u use a pure extract or the paste of a vanilla bean .
Once done add in the flour and milk alternately . Do not over mix once the flour is added . Be gentle with the batter .
Transfer half of the batter into another bowl. Fold in the melted and cooled dark chocolate to it . Do not overtmix . Use a silicon spatula to mix.
Spoon both the batters alternately in the loaf pan . Tap the pan to get rid of air bubbles . Run a skewer or a toothpick through the batter to give it the marble effect .
Bake it for about 60 mins or until the skewer comes out clean .
Its a Delicate cake so do not try to cut it when its hot . it will start crumbling . Let it cook on a wire rack for atleast 20 mins before demoulding .
