I usually stuff my Cannelloni’s with this mixture and play around with the sauce it is in . The filling is a very versatile and goes perfectly with most sauces .
This time around I wanted to try something with bell peppers because my husband loves the bell peppers .
I have used store bought cannelloni’s here . You can even make this recipe in a ravioli form as well .
The basic formula for Pasta dough is 1 egg to 100 gms of flour , along with some oil, water and salt.
So Ravioli’s can be done at home easily by hand or in a ravioli mould.
For the Roasted Pepper Sauce :
You Need :
Garlic – 20 gms
Onion – 100 gms + 50 gms
Bell pepper – 150 gms , Halved and Deseeded .
Oil – 2 tbsp
Butter – 1 Tbsp
Tomatoes– 350 gms , Pureed
Basil – Few leaves
Chilli Flakes to taste
Salt to taste
Cream – 2 tbsp (optional)
How to :
Preheat the oven at 200 degree celcius.
Take the Peppers and place them on a baking tray along with 100 gms onion and garlic . Rub some oil onto them and sprinkle some salt.
Bake them for about 20 mins or until the peppers are charred . Let them cool .
Cover them in a cling wrap and after sometime the skin can be easily peeled . Remove all the skin and grind them all into a smooth paste .
Now in a pan, take some oil and the butter . Add in the chilli flakes and 50 gms of finely chopped onion . Once Pink add in the pepper mixture. Cook for about a minute.
Now add in the Tomatoe puree . Let it cook on slow till the tomatoes are well cooked .
Season with salt and basil leaves .
If you are adding cream , Add it now and turn off the flame .
For the Cannelloni :
Canneloni shells – 8-9
Oil – 1 tbsp
Butter – 1 tbsp
Garlic – 20 gm, chopped
Onion – 150 gms, chopped
Mushrooms – 150 gms , cleaned and chopped
Spinach – 1 bunch , Chopped
Cottage cheese / Paneer – 125 gms
Chilli flakes , salt and pepper to taste .
How to :
In a pan , heat the oil and the butter . Add the garlic and after a few seconds add in the onions . Saute till pink .
Add the mushrooms . Saute till mushrooms dry out a little.
Add in the chilli flakes , salt and pepper .
Now add in the spinach and sauté till dry on full flame .
Turn off the flame and let the spinach cool down .
Then add in the crumbled paneer and mix it well .
Stuff this filling into cannelloni shells . the filling should be tightly filled or else it would come out .
Final assembly :
Lay the filled canneloni’s on a baking dish . Pour the bell pepper sauce generously over it .
You can either sprinkle Parmesan cheese over it or Cut some cheese slices and spread them over the dish , just like I did ( simply coz I ran out of Parmesan cheese ) .
