Mango is the king of fruits . But how can we overlook its raw version . Our very own Kachchi Kairi . It gives an amazing tart to the food, be it mint chutney or any plain jane salad . Kairi Panna is also a famous drink made in maharashtra .
My mom used to make this chutney. And its a favourite with all of my family members . Do give it a try and let me know how you like it.
You need :
400 gm – Raw Mangoes ( Kairi ) , diced
200 gm – Sugar
1 tbsp – oil
1 tsp – Jeera
1/2 tsp – Turmeric powder
1 1/2 tsp – Red chilli powder
2-3 Dry Red Chillies
Salt to taste
Water
How to :
In a pan, Pour the oil. When hot, add the jeera .
When it splutters , add the dry red chillies and the chopped raw mangoes . Stir it well for about a minute . When the mangoes start to soften a bit , add the turmeric and red chilli powder .
Mix it well . Add in the Sugar and salt. Add about a cup of water to it . Let it cook on simmer for 15 minutes or till done . Let it cool before putting in a jar.
You can store it in refrigerator for atleast 8 days .
Whip up this chutney when you don’t feel like cooking an elaborate dish .
This chutney is more like an indian jam , which is sweet , sour and spicy at the same time . It tastes great in sandwiches and on a Bread butter toast too.
The amount of sugar may vary according to the type of raw mangoes used . For example if you are using Totapuri Kairi , you will need lesser sugar. And if Rajapuri Kairi is used , you may have have to up the sugar.
