Rains. Just the perfect time for a lot of things, a cuppa coffee, a slice of cake , bhajiyas and a good bowl of wholesome soup .
The combination of carrots and plum is exceptionally good . Carrots are somewhat sweetly bland and the plums are sweet and sour at the same time.
When you make this soup, you realize incorporating fruits to your food might actually be a good idea .
This soup is a perfect choice for people who cant have tomatoes for any reason. Its somewhat nostalgic to a rich Tomato soup , minus the cream.
The amount of sugar can be adjusted as per taste and what type of plums you get.
The imported ones are more sweet whereas the indian ones are more sour.
You can even up the quantity of plums. It will give a beautiful deep red color to the soup.

You need:
Carrots – 200 gms or 2 pieces
Plums – 120 gms or 2 small ones, pitted
Butter – 1 tbsp
Peppercorns – 7-8
Garlic – 5-6 pods, crushed
Flour – 1 tsp
Onion – 1 , chopped
Salt to taste
Hot water – 2 cups
Sugar – 1 tsp
Parsley to garnish
Garlic toast to accompany.
How to :
In a Pressure cooker , Add the butter . Once it heats up , add the peppercorns and onions . sauté till translucent.
Then add the carrots and plum . sauté them for a bit . Add the salt and sauté for a minute.
Now sprinkle the flour. Pour in the hot water. The quantity of water may vary depending on how big your carrots are .
Blow a whistle or two till its soft and cooked thoroughly .
Blend it with a hand blender till smooth.
Add in the sugar and some parsley.
Once boiled , Serve hot with some bread sticks or garlic toasts.
