I love mushrooms . Their texture , taste as well as the nutty earthy flavour they give to the dish in totality.
They are quite versatile too . They taste amazing in indian cuisine . If you dont find the fresh button mushrooms around you , you can use the tinned ones as well . Just blanch them a little in hot water to get rid of the brine.
These rolls have a Pav bhaji flavor . So feel free to add capsicum to it .
You need:
For Stuffing :
2 cups – Mushrooms, finely chopped ( 2 packets of fresh mushrooms )
1 onion, big, chopped
2-3 Tomatoes, chopped
1 ½ tbsp Ginger garlic paste
1 tsp Coriander powder
1 tsp Jeera powder
1 tsp Red chilli powder
¼ tsp Sugar
Salt to taste
2 tsp Commercial Pav bhaji Masala ( I used Everest )
2 tsp Kasuri Methi, crushed
¼ cup Coriander leaves, chopped
2 tbsp Cream
1 tbsp Oil
2 tbsp Butter
For Rotis :
1 cup Plain flour
½ tbsp cornflour
A pinch of soda bi carb
½ tsp Butter
A pinch of salt
For Garnish:
Onion rings soaked in Lemon juice and some salt with some coriander leaves.
How to:
Knead the dough for the rotis and cover it with a muslin cloth and keep aside for ½ hr.
In a pan, heat the oil and butter. Add the chopped onions , ginger garlic paste and sauté till browning starts.
Add the tomatoes and sauté till soft and cooked.
Add in the kasuri methi , pav bhaji masala, coriander powder, jeera powder, red chilli powder and salt.
Cook till oil seperates . Add in the mushrooms and cook till the water evaporates.
Add in the cream and the chopped coriander leaves.
The recipe calls for a maida roti as the base to this roll . But you can totally use a wholewheat roti instead. It tastes superb too. ( So you can save some calories too 🙂 )
Roll out the rotis as thin as possible and cook them on a tava .Spoon in the mushroom mixture. Top with the onion rings.
You can either serve it like tacos. Or press it into a roll and further cook it on the tava.
Serve hot with Green chutney and some Ketchup.
