Almonds are considered one of the healthiest snacking option out of the lot . But to me any indian meetha is incomplete without a garnish of some slivered almonds.
But such an amazing ingredient can be used only as a garnish. In this recipe it’s the Hero.
Badam ka halwa is made two ways .
First is when almonds are grinded with some milk and sautéd in ghee on simmer for a really long time . Then khoya is added along with some milk, cardamom and sugar.
The other one is this method.
Its one of the simplest recipes and can be made in no time.
You need :
100 gms Almonds ( weigh and then soak )
2 tbsp Rawa / sooji / Semolina
3 tbsp Pure Ghee
3 tbsp Sugar
A pinch of Cardamom powder
A big pinch of Saffron strands
1 cup Milk
How to :
Soak almonds for atleast 5-6 hrs. Peel their skin off.
Grind them in a mixer until breadcrumb like.
In a heavy bottomed pan, put the ghee and the ground almonds. Sauté for about 43-4 mins on simmer . Add in the semolina and sauté for a minute.
Now pour in the milk , and add in the sugar and cardamom . I chose to put my saffron all on top for the garnish purpose. You can add it here and mix it well.
Let the semolina absorb the milk and be thoroughly cooked.
Just to finish off the halwa , drizzle a teaspoon of ghee . It starts to leave the sides. That’s the time to turn off the flame and serve it. Garnish with some almond slivers and Voila , the halwa is ready in a jiffy.
