This is one those recipes which is a complete meal in itself. Its full of flavours. And the Aaloo lachcha gives it a crunch .
I suggest you put the aaloo lachcha just before serving.
If you prefer spicy food, you can up the chilli quotient in the spinach and the tomato layer.
Its a perfect option when you have to cater to a big group or a party at home. Its a perfect alternative to a Biryani or a Pulao.

You need:
2 cups Basmati rice, soaked for atleast one hour
300 gms or 3 big Potatoes, Grated thickly
100 gms Cottage cheese, grated
For Spinach layer:
250 gm Spinach leaves, washed and blanched
200 gms of Tomato, pureed
2 tbsp Ghee
1 tsp cumin seeds
1 tsp Red chilli powder
60 gms or one small Onion, chopped finely
½ tbsp. of Ginger-garlic-green chilli paste
One pinch of Garam Masala
Salt to taste
For the Tomato Layer:
375 gms or 4-5 Tomatoes, Pureed
½ tsp Cumin seeds
½ tbsp Ginger-garlic-green chilli paste
2 tsp Red chilli powder
½ tsp Turmeric powder
Salt to taste
1 tsp Sugar
50 ml or ½ cup Milk
One pinch of Garam masala
How to:
Monitor the salt in this recipe because all the elements have salt .
Boil the rice in excess water. Once almost done, drain the excess water and keep aside.
Heat oil in a pan, Sprinkle some salt on the grated potatoes . When the oil is really hot , deep fry the potatoes till golden and crispy.
Remove on a kitchen towel to absorb extra oil. Keep aside.
For the spinach layer.
Grind the boiled spinach into a smooth paste.
Heat ghee in a pan. Add in the jeera . Once it splutters, add the ginger-garlic-green chilli paste. sauté for a bit, then add the tomato puree.
When the tomato is cooked and some oil is visible, add in the spinach puree and the spices.
Cook till combined.
For the Tomato layer:
Heat ghee in pan. Add the jeera. Let it splutter.
Then add the ginger-garlic-green chilli paste. Add in the tomato puree and the spices. Cook till the oil is released. Then add the milk. Cook till combined.
Layering the rice:
Preheat the oven at 200 degree celcius.
In a oven proof dish. Layer the steamed rice first. Then comes the spinach layer.
Then sprinkle the grated cottage cheese over it. If you like spicy, you can sprinkle some spices like red chilli powder and chaat masala over the cottage cheese.
Then comes a layer of Steamed rice again . Over it pour the tomato puree .
Repeat till you have the elements with you.
Bake for 15 mins in the preheated oven.
Garnish with the deep fried Aaloo lachcha over it and Serve with vegetable raita.
