Finally Diwali is here. Happy Diwali to all my lovely follwers.
Its my sons first Diwali this year , which makes it super special for me.
Anyways I love Diwali for the festive spirit it brings in . Though I am not a fan of the firecrackers. I might as well donate that money for a good cause. But honestly, it’s a very personal thing.
I came across the recipe for gud ka halwa on www.whiskaffair.com . But my version is a little different , with the khoya being upped and rose water being added , etc.
Sooji ka halwa is a staple in most indian families. We normally flavor it with kesar and elaichi. This time around I thought of using Rose. Its more refreshing and jaggery gives it that earthy flavor.
Jaggery being a healthy alternative to sugar, makes this treat a real treat. I made my version with jaggery and no sugar. You can make as per your own tastes.
This recipe serves 4 people.

You need:
150 gm Sooji/ rawa/ semolina
70 gm Jaggery
75 gm Pure ghee/ clarified butter
125 gm Khoya / Mawa
1 plus ½ cup water
40 gm Sugar
1 tsp Rose water ( good quality )
Rose petals and Pistachio slices to garnish
How to:
In a heavy bottom pan, put in the ghee. Once it is a little hot, add in the cardamom and sooji . sauté it on simmer until golden in color.
Never heat up the ghee to its burning point . It loses much of its benefits.
The color of the halwa depends on how golden you sauté the sooji. The taste varies slightly if you go in for a deeper color.
In another pan, heat up the water. Turn off the flame. Now add the jaggery and sugar to it. Let it melt. Add in the rose water too.
Once the sooji is sautéd , add in the khoya . It will froth a little.
Once it comes together, add in the jaggery water slowly. Be careful as it will froth again. Stir it till all the water is absorbed.
Serve it garnished with rose petals and pistachio slices.
You can sprinkle a few drops of rose water too.
The sugar can be totally eliminated from this halwa. It can be made only with jaggery and yet it tastes amazing.
