2016 has been a year of ups and downs, of happiness and sadness, of pain and gain .But most of all it gave me the best gift of my life. My baby and my blog.
I always feel life is like a fruit cake. A little sweet, a little sour. Sometimes heavy and sometimes light.
That’s why , here is a simple strawberry swirl pound cake. This recipe is inspired by Subhashini from Fondbites. She does a fabulous job of teaching all that she has.
This cake is a perfect choice if you are in a rush but want to grab a bite with your cup of coffee. Fills you up for a while.
I am always in favor of naked cakes (plain cakes devoid of icing), in terms of taste as well as preference. I find them less fussy and less taxing on the body too.
This recipe is a total keep sake. If you aren’t a fan of strawberries, try blueberries, mulberries, raspberries or cranberries.
You need:
225 gms Butter , room temperature
6 eggs , room temperature
200 gm Curd
3 gm Salt
2 tsp Baking powder
160 gm Fresh Strawberries + 2 tbsp Sugar
30 gm Cornflour
375 gm Flour
1 tsp Good quality Vanilla extract
450 gm Castor sugar
Strawberry slices to garnish.
How to:
Preheat the oven at 180 degree Celsius.
Line two 6 inch pans with butter paper or a 7 inch pan and a loaf tin like I did.
In a mixer, grind the strawberries with the little sugar to make a puree.
Sift the flour , corn flour , baking powder and salt atleast twice.
In a Bowl, start creaming the butter until light and pale. For about 2-3 minutes.
Add in the castor sugar and cream it further until well combined.
Start adding eggs one at a time.
Whisk for a bit after each egg. It should be a smooth batter to look at.
Once all eggs in, mix in the curd and the vanilla extract.
The mixture may look somewhat curdled here. But that’s fine.
Slowly start to put in the dry mixture.
Now, this cake is a dense pound cake. So the batter is quite thick.
Now spread a thin layer of batter in the cake pan. Drizzle some of the strawberry puree. swirl it into the batter.
Now pour the remaining batter. Swirl the puree again.
You can do the swirl once or twice, depending on your choice.
Garnish with thin slices of strawberries.
Bake for about 50 minutes or until done.
