As I bid adieu to my favourite fruit , I wanted to make a recipe on mind from past one year.
I had eaten a strawberry galette last year at an event in Pune and since then it was on mind to try it out.
I love berries. The perfect tartness they bring to a dish is what I love the most when I get to bake with them.
This dessert is so juicy when u cut the galette , like a burst of flavour with a little crunch from the base.
You need:
250 gms All purpose flour
113 gms Butter, cold, cut into cubes
2 tbsp Sugar
A pinch of Salt
¼ cup Milk
Brown sugar to sprinkle
For Filling:
120 gm Strawberries , cut into pieces
2 tsp Sugar
1 tsp Cornflour
To be mixed together:
50 gms Cream Cheese
2 tsp Sugar
2 drops Vanilla extract
1 tbsp Pistachio slices
How to:
The dough for the galette is handled just like a tart dough. Not to be overmixed or overworked.
The ingredients are mixed with a light hand and the dough is wrapped in a cling wrap and refrigerated for an hour or so.
This dough is eggless. if you prefer your bakes with egg , this recipe would need one egg white instead of the milk.
For the filling , mix the cream cheese with the sugar and the vanilla and mix until smooth. Now toss in the sugar and cornflour with the strawberries. Again if you are using eggs , you can use one egg yolk with the cream cheese and vanilla.
Roll out the dough into a circle. keep the strawberries in the center . Put spoonfuls of the cream cheese mixture over the strawberries.
Now the edges of the circled dough were kept free of the filling. Start turning the edges over the filling, just so the base doesn’t bend . we are not making a potli , so the center remains exposed.

Brush a little milk on the galette just before baking . Sprinkle some brown sugar and the sliced Pistachio.
Put it into a preheated over at 200 degree celsius for about 45 minutes or until done .
Cut into slices and serve hot.
You can put a dollop of crème friache on the top.
I love warm desserts . And this one is a total winner for cheesecake lovers . Try it with mangoes , peaches , plums , blueberries or even chocolate . Possibilities are endless .
