After a Looooong Break , i wanted to post something i love to make. A simple no icing naked cake.
I believe that every baker has a soft spot for something to make . For some its Macarons, for some its desserts . For me its Naked Cakes . I am ALWAYS ready to make one. Ready to try new ones .
Its such a simple bake where the flavour is the hero . No fancy garnishes no fancy ingredients . Simple stuff put together to make something heavenly.
This cake is good without the crumble too . So if u prefer simpler stuff just eliminate it. And if u find peanut butter chips , they taste amazing with chocolate ones over this cake.
You need:
225gm Butter, Softened
225gm Castor sugar
225gm All purpose flour
1 tsp Vanilla extract
2 tsp Baking Powder
4 eggs ( approx. 55gms each )
50 ml Milk
25gm Cocoa Powder
For crumble:
125gm All purpose flour
75gm Castor sugar
75gm Butter, cold and cubed
75gm Semi sweet chocolate chips
How to:
Preheat the oven at 180 degree celcius.
Cream together the butter and sugar until pale and fluffy.
Add eggs, one by one.
Sift baking powder and the flour in a bowl.
fold this sifted flour to the butter and egg mixture slowly . don’t overmix.
Add in the milk and vanilla.
Divide the batter into two bowls. Add sifted cocoa powder to one of them and fold it in until combined.
Pour the vanilla batter into two loaf tins. Spoon in the cocoa batter randomly and run a skewer through the tins.
For crumble, mix all the ingredients and sprinkle over the cakes.
Bake for 50-60 minutes or until done.
Dust with some icing sugar and serve.
If you are making the crumble first, keep it in the refrigerator until used.
This recipe is by Rachel Allen and I personally loved the idea of a crunchy top to a rich pound marble cake.
But I found the crumble a bit dry, so if u feel the same, up the butter and chocolate chips a little.
