Brookie . This term came into fashion after a Masterchef Australia Contestant floored the judges with a cookie that was a cross between a cookie and a brownie and was called Brookie.
Many bloggers across the world attempted their own versions. This recipe has been adapted from Sallys baking addiction , with little tweaks made here and there.
If you love a cookie that’s soft and crumbly and rich with flavor, Brookie is your thing.
They go perfectly with a glass of milk or just on their own . Perfect for a dessert as well if u love warm cookies like me !
In this Cookie,Walnut can be replaced with Hazelnuts / Pecans / Almonds . So go play!
You need:
65gms Flour
12 gms Cocoa powder
½ tsp Baking powder
35gms Butter, softened to room temperature
115gms Dark chocolate ( I used Van Houten, 55% )
25gms Granulated sugar
75gms Brown Sugar ( I used Mawana )
1 egg
1/2tsp vanilla extract
65gms Walnuts , roughly chopped
65gms Chocolate chips
How to:
Melt the chocolate in a Double boiler or a Microwave, stir it well so that there are no chunks. Set aside to slightly cool.
It shouldn’t be too hot to melt the butter or scamble the eggs.
Sieve together Flour, cocoa powder and baking powder.
In a large bowl, whisk together butter and both the sugars on medium speed until creamy. Add in the egg and Vanilla and whisk on high for a min more.
Make sure you scrape down the sides. Pour in the melted chocolate and whisk again to bring it together.
Add flour mix slowly and whisk it to combine. Lastly mix in the chocolate chips and walnuts and mix it well.
Put the dough in a cling wrap and put to chill in a refrigerator for an hour or so.
Preheat the oven at 180 degree Celsius. Spoon out the batter onto the baking tray keeping little distance between each of them ,
Bake for 12-15 mins . Cool on a wire rack before u serve.
Flavor is something that can be found in simplest of foods . And thats what i aim at. I like things that have an identity . A flavor . Not just technique or a fancy name.
