Eggs. A super versatile and easy to use ingredient in our pantry. Right from snacks, salad, main course to desserts, egg can find its way into a meal.
Here is Eggs Kejriwal. A dish that was discovered in bylanes of Mumbai is now a much loved one all over. And restaurants have their variations to offer too.
My version involves Mushrooms. I Love Mushrooms. They have such an earthy and complex flavor. U can skip it if you dont prefer them or are allergic to them. Mushrooms just blend with the overall flavor of the dish, adding more depth to it .
Now its simple. Eggs + Cheese + Mushrooms. It has to taste good đ
A little variation can be made to suit your taste. If you donât like Garlic, you can skip it. But believe me Garlic tastes amaze with eggs, be it roasted garlic, green garlic or butter sautĂ©ed garlic.
You cant really make this and keep ahead because the whole charm of the dish is in oozy sunny side up eggs with melting cheese inside and a crisp bread to hold it all together.
But you can surely prep in advance. Keep the cheese sauce ready and the veggies cut. Donât saute in advance. The veggies will go soggy and lose crunch.
This dish is more like a complete meal. It has eggs,cheese,bread and veggies. So doesnât  really need a accompaniment.
You need :
6 Eggs
6 Bread slices
6 Cheese slices
20gms Butter
1tsp Garlic, chopped
50gms Onion, chopped
50gms Capsicum, chopped
30gms Tomato, chopped
150gms Mushrooms, cleaned and chopped (one packet of fresh button mushrooms)
Salt to taste
Pizza seasoning to taste
Chopped coriander leaves to garnish
For the sauce:
15gms Butter
1tbsp Flour
175ml Milk
œ a cube of cheese (optional)
Salt to taste
Pizza seasoning to taste
How to:
In a nonstick pan, heat the butter. Keep the flame on medium. Put in the flour and sauté it for a few seconds.
Whisk in the milk carefully and slowly. It will start to thicken up so keep stirring it.
Mix in the cheese, salt and seasoning. It will turn thicker once it cools down, so it shouldnât be too thin or thick when you turn off the flame.
Keep it aside to cool a bit.
In another nonstick pan, put in the butter. Once hot, put garlic and sautĂ©. Now add in the onion, capsicum, tomato and mushroom. Stir them on full flame so that the veggies donât turn soggy. Season them with salt and pizza seasoning. Keep aside for a bit.
Preheat the oven at 200 degree Celsius.
Toast the bread slices in a toaster and if you wish to cut them in some specific shape you can do that now.
Spread the white sauce on it. Spoon in the tossed veggies mixture and place a cheese slice over it.
Put this into the preheated oven for a few minutes until the cheese softens.
In another pan, prepare a Sunny side up egg. Season with salt and carefully place it over the cheese slice.
Garnish with coriander leaves and serve with some Ketchup.
