
Mawa cake is nostalgia to most of us . A slice of warm cake with a cup of coffee / tea / milk is comforting to another level . For me . It’s my binge . Soul food . It instantly makes me feel better .
So I made a cake . Had no mawa . Instead tried this genius recipe by Sae Koranne . I had previously made a Similar one but with egg . But recently I am leaning towards eggfree baking . And luckily I saw her post this gem . Let’s see how this one is made –
You Need :
1 cup of Gulab jamun mix ( Gits / Chitale / MTR )
1/4 cup Maida
1/4 cup Sooji
1/2 cup Powdered Sugar
1 tsp Baking powder
1 tsp milk masala / powder of nuts with some saffron and cardamom .
1 cup yogurt , whisked
100 gm Butter , melted
Few tbsp of milk to adjust the consistency
Chopped Almonds to garnish .

How To :
Preheat the oven at 160 degree Celsius. Line a 8″ tin with parchment paper.
Dry whisk the Gulabjamun mix, maida , sooji, baking powder and milk masala . I used a home made one .you can even use a store bought.
Now add in whisked yogurt to the dry mix . Add in a few spoons of milk to adjust the consistency. Once it is combined add in the butter .
Now pour this into the greased and lined tin . Sprinkle few chopped almonds . And put it to bake. Roughly it would need 40-45 mins . Or untill it’s done .
Cool and demould .
Try not to replace the sooji with maida . because it gives a beautiful crumb to the cake . The aroma is perfect too . You can add saffron to th batter to take it a notch up.
You can also replace the butter with ghee .that’s something I want to do too . Just because I love ghee 🙂 and it adds to the Indian mithai kinda flavour of this cake .
