Leftover idli batter ?
Let’s make Mattar ke appe.
A simple recipe that can be customised to your preference.
In a grinder , I added a cup full fresh green peas , green chillies, few pods of garlic ,an inch of ginger and handful of Coriander leaves .
Let’s make a coarse paste out of it .
Add this to the idli batter . Which is half a kg roughly.
Add some finely chopped onions , some grated carrots too . These veggies can be entirely of your choice. Add some salt to taste and lastly some eno or baking soda .
Grease an appe pan and keep it to heat . Pour spoonfuls of this batter and let it cook on medium for 2-3 mins . Now cover the pan and let it cook for 4-5 mins on slow flame . The idli batter takes a while to cook completely .
Smear some ghee and flip them . Cook on both sides untill golden and crisp .
Serve with ketchup / green chutney / Mayo !
This can be made with lots of beetroot too .
I make a mix veggie version too . Basically all the veggies- in- fridge version .
